Salad in a Jar

I started living a healthy lifestyle about two years ago and I have never felt better. My biggest struggle is making healthy choices when I am in a hurry and don’t have time to grill up some chicken. Last week I came across this salad idea on pinterest so I decided to give it a try. So far I have loved it! These pre-made salads saved me over the weekend! Supposedly they will last about 6-7 days refrigerated. However, I like my salads super fresh so I would say it’s more like 4-5 days.

Step 1. Shopping! 

Step 2. Cleaning and cutting. I also boiled some quinoa and whole wheat pasta.

TIPS:
1. Dressing on the bottom, lettuce on the top.  If the two are touching the lettuce will turn to slime.
2. Dressing always goes in first. On top of your dressing, use a rather “hearty” vegetable, such as shredded cabbage, pea pods, or julienne carrot matchsticks.  They can withstand the acidity of the dressing, and actually get better!
3. Pack it in. Use a nice variety of colorful vegetables! 
 

The great thing about these salads is that you don’t have to follow any specific recipes. Whatever you like, throw it in their! For those of you that would rather some recipes, here are some I found on my not-so-simple life blog.

Layer, in this order:

Poppyseed:
-poppyseed dressing
-carrot shreds
-green peas
-pineapple
-blueberries
-raspberries
-lettuce
 
Asian:
-light asian ginger dressing
-peapods
-carrot shreds
-cabbage shreds
-water chestnuts
-green peas
-bean sprouts
-quinoa
-toasted sesame seeds
-lettuce
 
Seafood:
(I make a light dressing with light mayo, skim milk, s and p, and parmesan)
-dressing
-cabbage shreds
-black olives
-quinoa
-pasta
-celery
-drained canned crab / drained canned salad shrimp
-lettuce
 
Caesar:
-light Caesar dressing
-carrot shreds
-diced grilled chicken (or canned chicken)
-celery
-cukes
-lettuce
-parmesan
(add croutons later) …they get mooshy in the jar.

    • Mmmmmm . num!!!! LOL love this idea and fruit makes it so refreshing! My psenoral favorite isx1 Apple (or cucumber)x1 beetrootx1 Carrotall grated up or if your like me and travel with a food processor a few seconds and its done!

      • I eat salads every day, but usually eat them right away. This would be good in the summer when I’m traveling :)
